Microwave New England Clam Chowder Recipe
- 4 slices bacon
- 2 (6 1/2 ounce.) cans chopped clams
- 1 1/2 c. peeled and diced potatoes
- 1/3 c. chopped onions
- 2 tbsp. flour
- 1 1/2 c. lowfat milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tbsp. butter
- Place bacon in 2 qt glass dish; cover and microwave for 4 to 5 min on high till crisp.
- Remove bacon, crumble, and set aside.
- Drain clams and add in liquid to bacon drippings.
- Stir in potatoes and onions.
- Cover and microwave 9 to 12 min till potatoes are soft.
- Stir flour into 1/4 c. lowfat milk.
- Add in flour mix and remaining lowfat milk, clams, salt, and pepper to warm liquid.
- Cover and microwave 4 to 5 min.
- Let stand 3 to 5 min.
- Return crumbled bacon and serve.
