Smoke-Poached Chicken Breasts

  1. COMBINE the chicken broth, 3 cups water, the bottled smoke, celery, onion, and bay leaf in a large skillet with straight sides.
  2. BRING the broth to a low boil over high heat.
  3. Reduce the heat to medium-low.
  4. Carefully add the chicken.
  5. Simmer for 20 to 25 minutes, partially covered, until the internal temperature reaches 160F.
  6. REMOVE the chicken and discard the poaching liquid.
