Asian Spinach Salad

  1. Whisk together 6 tablespoons olive oil with sugar, vinegar, and soy sauce.
  2. Set this sauce aside.
  3. Heat remaining 2 tablespoons olive oil over medium heat.
  4. Stir in noodles, almonds, and sesame seeds.
  5. Cook until golden brown.
  6. Let cool.
  7. Toss spinach and chopped onions in a large bowl.
  8. Add sauce and noodle mixture.
  9. Serve immediately.
