Apple Charlotte (Passover) Recipe
- 3 x Egg yolks
- 2/3 c. Sugar
- 1 dsh Salt
- 2 c. Grated apples
- 1/3 c. Matzo meal
- 2 tsp Grated lemon rind
- 1 Tbsp. Slivovitz (plum brandy)
- 3 x Egg whites stiffly beaten
- 4 Tbsp. Grnd pecans
- Beat the egg yolks, sugar and salt till thick and lemon colored.
- Stir in the apples, matzo meal, lemon rind and slivovitz.
- Mix in the egg whites.
- Turn into a greased 8-inch spring form pan.
- Sprinkle the nuts on top.
- Bake in a 350 degree oven 35 min or possibly till brown and hard.
- Cold before removing sides of pan.
- Serves 6 to 8.
