Shrimp & Scallop Linguini Recipe
- 1 pound scallops
- 1 pound lg. shrimp, shelled
- 1 lg. red bell pepper, sliced
- 1 tbsp. dry leaf basil
- 2 tbsp. minced fresh parsley
- Lemon slices (garnish)
- 1 handful snow peas
- 4 cloves chopped garlic
- 1/2 c. butter (1 stick)
- 1/2 teaspoon grnd pepper
- 1/4 teaspoon salt
- 11 ounce. linguini, cooked & liquid removed
- Heat butter in large skillet, saute/fry garlic 1 minute.
- Add in shrimp, scallops, red pepper slices, snow peas, basil, parsley, salt and pepper.
- Saute/fry 2 to 3 min till shrimp are tender.
- Serve over linguini.
- Garnish with lemon slices and sprig of parsley.
- Serves 6.
