Green Rice
- 4 oz (about 2 cups) spinach
- 1/2 cup fresh cilantro, chopped
- 3 cup water
- 3/4 cup vegetable oil (I use canola)
- 2 1/2 cup long grain white rice
- 1 tsp salt (you can also use sea salt)
- 3/4 cup corn kernels
- 1 garlic clove (or 1/4 teaspoon minced garlic)
- 1 cup thinly cut spinach
- 1 hot chili pepper, fresh with the stem removed
- In a blender, combine the 2 cups spinach, cilantro, garlic and chili pepper.
- Blend until smooth.
- Set aside.
- In a medium sized skillet over medium heat, heat the oil.
- Add the rice and cook, stirring constantly, until lightly golden, about 5 minutes.
- Add the vegetable mix, water, salt and corn and bring to a boil.
- Cook for 5 minutes.
- Lower the heat and simmer, covered, until the liquid is absorbed, about 15 minutes.
- Add the 1 cup cut up spinach before serving.
