Shrimp Crostini
- 8 ounces cream cheese 1 package, softened
- 4 tablespoons mayonnaise
- 6 cloves garlic or to taste, minced and divided
- 2 1/2 tablespoons scallions, spring or green onions finely chopped
- 1 x black pepper to taste
- 1 1/2 tablespoons butter, unsalted
- 3 tablespoons parsley leaves freshly minced
- 24 medium shrimp freshly peeled and deveined
- 24 each french bread rounds, toasted
- 1 x cherry tomatoes halved
- 1 x parsley leaves fresh
- In a small bowl, combine cream cheese, mayonnaise, 3 cloves garlic or to taste, green onion and pepper, stir until well blended, set aside.
- In a large skillet, melt butter over medium heat.
- Stir in remaining 3 cloves garlic or to taste and parsley.
- Stir in shrimp, cook for about 4 minutes, or until pink and firm.
- Do not overcook.
- Spread cream cheese mixture evenly over bread.
- Place 1 shrimp on top of each round.
- Top with tomato halves and parsley leaves.
- Serve.
