Tinga de pollo
- 1 chicken pieces or breast
- 1 can chipotle chiles
- 3 roma tomatos
- 4 bay leaves
- 1/2 large white onion
- 1 salt to taste
- boil chicken in water with salt and a piece of onion for flavor.
- When done let cool so you can handle it.
- pull apart chicken in strips, set aside.
- in blender add small can of chipotle chiles , 2 cans of water (using the chipotle can) the tomatos, and salt to taste.
- heat oil in a fry pan, add chicken and onion fry until they are golden brown.
- add salsa mixture from blender and bay leaves and let simmer about 10 minutes and enjoy.
