Mild Tasting Curry Flavored Stir-fried Eggplant

  1. Peel the eggplants at 4 sections to make strip patterns and cut into half lengthwise.
  2. Then further cut into half crosswise and then again into half lengthwise before cutting into 2 or 3 pieces.
  3. Soak in water to remove the astringency.
  4. Take out the seeds inside green pepper and then cut into half.
  5. Mix ingredients and make the sauce in advance.
  6. Pour sesame oil in a pan and stir fry the ground pork until the color turns.
  7. Add eggplants and stir fry until it wilts.
  8. Add sauce from step 4 and mix frequently while cooking to evaporate the liquid.
  9. When the liquid is almost gone, add green pepper and stir fry until it is cooked through.
  10. Mix well and it is ready!
