Mild Tasting Curry Flavored Stir-fried Eggplant
- 6 Eggplant - small Japanese type
- 6 small / 3 middle Green pepper
- 200 grams Ground pork
- 3 tbsp Miso
- 2 tbsp Soy sauce
- 2 tbsp Cooking sake
- 1 tsp Curry powder
- 90 ml Japanese dashi stock
- 1 Sesame oil (for stir frying)
- Peel the eggplants at 4 sections to make strip patterns and cut into half lengthwise.
- Then further cut into half crosswise and then again into half lengthwise before cutting into 2 or 3 pieces.
- Soak in water to remove the astringency.
- Take out the seeds inside green pepper and then cut into half.
- Mix ingredients and make the sauce in advance.
- Pour sesame oil in a pan and stir fry the ground pork until the color turns.
- Add eggplants and stir fry until it wilts.
- Add sauce from step 4 and mix frequently while cooking to evaporate the liquid.
- When the liquid is almost gone, add green pepper and stir fry until it is cooked through.
- Mix well and it is ready!
