Key Lime Chicken Sandwich

  1. Place the shredded chicken, coconut, lime juice, lime zest, and onions in a bowl and mix to combine.
  2. Leave this covered in the fridge for 20 minutes to let the flavors meld.
  3. Meanwhile, cut the pitas/flat bread in half, split open and toast lightly.
  4. Place two slices of tomato, Spinach, mayo, and a 1/4 cup of the chicken mixture into the toasted pita and enjoy.
