Baked Snapper Recipe

  1. Wash fish and dry.
  2. Score the flesh diagonally.
  3. Place the onion, garlic, ginger, tamarind liquid, soy sauce, oil, salt and turmeric into a blender.
  4. Then rub this mix into the fish on both sides.
  5. Place the fish into vine or possibly bannon leaves (or possibly tin foil) into a baking dish.
  6. Sprinkle with coriander and fold over the leaves to enclose, secure with skewers.
  7. Bake for around 35-40 min.
  8. Serve immediately with wild rice.
