Candied Grapefruit Peel

  1. Remove peel in lengthwise sections.
  2. Cover with cold water; boil for 5 minutes.
  3. Drain.
  4. Repeat three times.
  5. Dry well on paper towels.
  6. Cut peel into 1/4 inch strips.
  7. Combine sugar, corn syrup, and water in saucepan.
  8. stir over low heat until sugar is dissolved.
  9. Add peel and bring to a boil.
  10. Cook over low heat about 40 minutes until most of the syrup is absorbed.
  11. Drain off excess syrup.
  12. Roll peel a few pieces at a time in granulated sugar.
  13. Let dry for 24 hours on a wire rack.
  14. Store in a covered container.
