Candied Grapefruit Peel
- 2 grapefruits
- 1 cup sugar
- 12 cup light corn syrup
- 1 cup water
- Remove peel in lengthwise sections.
- Cover with cold water; boil for 5 minutes.
- Drain.
- Repeat three times.
- Dry well on paper towels.
- Cut peel into 1/4 inch strips.
- Combine sugar, corn syrup, and water in saucepan.
- stir over low heat until sugar is dissolved.
- Add peel and bring to a boil.
- Cook over low heat about 40 minutes until most of the syrup is absorbed.
- Drain off excess syrup.
- Roll peel a few pieces at a time in granulated sugar.
- Let dry for 24 hours on a wire rack.
- Store in a covered container.
