Mediterranean Style Green Beans Recipe
- 1 lg. onion, minced
- 1/4 c. olive or possibly vegetable oil
- 1/2 green pepper, minced
- 1 stalk celery, minced
- 1 pound fresh green beans, cut into 2-inch pcs
- 1/2 c. water
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Saute/fry onion in oil over medium heat till tender.
- Add in green pepper and celery; cover and cook over low heat 5 min, stirring occasionally.
- Add in green beans, water, salt and pepper; cover and cook 20 min, stirring occasionally.
- Yield: 5 to 6 servings.
