Stuffed Zucchini
- 6 medium zucchini
- 2 onions, finely chopped
- 250g lamb mince
- 1 tablespoon finely chopped parsley
- 1/2 cup short grain rice, cooked
- 150g grated KRAFT* Cheddar Cheese
- Hollow out zucchinis with a teaspoon.
- Cook onion in a frying pan until soft.
- Add lamb, parsley, cooked rice and cook until meat is brown.
- Stir in 1/2 of the cheese.
- Fill zucchini with the meat mixture and place in a baking dish.
- Bake at 190C for 20 minutes.
- Remove from oven, sprinkle with remaining cheese and bake a further 5 minutes or until cheese melts.
- Enjoy.
