Stuffed Zucchini

  1. Hollow out zucchinis with a teaspoon.
  2. Cook onion in a frying pan until soft.
  3. Add lamb, parsley, cooked rice and cook until meat is brown.
  4. Stir in 1/2 of the cheese.
  5. Fill zucchini with the meat mixture and place in a baking dish.
  6. Bake at 190C for 20 minutes.
  7. Remove from oven, sprinkle with remaining cheese and bake a further 5 minutes or until cheese melts.
  8. Enjoy.
