Mandarin Orange Chicken

  1. Flatten chicken to 1/4-inch thickness.
  2. In a shallow dish, combine the flour, salt and pepper; coat chicken.
  3. In a large skillet, brown chicken in oil on both sides.
  4. Combine orange juice, marmalade, mustard and rosemary; pour over chicken.
  5. Bring to a boil; cook for 5-8 minutes or until chicken juices run clear and sauce is thickened.
  6. Stir in oranges and orange peel.
  7. Serve over rice if desired.
