The DR. Is In... Smokin Mutant WINGS wrapped in Bacon Recipe
- 8 chicken legs
- 8 strips of bacon, (not thick cut).
- 1 cup plain BBQ Sauce
- 1/2 cup Dr Pepper
- 1 tbsp soy sauce
- 1 tsp Apple cider vinegar
- 1 tsp worcestershire sauce
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper.
- Mix all the sauce ingredients together.
- Marinate chicken legs with the bbq sauce for 4 to 24 hours.
- Drain the marinade from the legs and wrap each leg with a strip of bacon and secure using wet toothpicks.
- (reserve the barbecue sauce)
- Set up your grill for Indirect Heat using a drip pan.
- Cook at 350F for 1 hour with a couple of handfuls of wet hickory chips directly on the hot coals.
- Place the reserve barbecue sauce/marinade in a saucepan and bring to a gentle boil.
- Reduce heat and simmer 5 to 10 minutes, just long enough to thicken.
- After 1 hour of cooking use the barbecue sauce to glaze chicken.
- Glazed about every 10 minutes for the next 30 minutes.
- Remove from the grill and then gently remove the toothpicks.
- Allow the chicken to rest for about 10 minutes before serving.
- Serve with ranch or blue cheese dressing.
