The DR. Is In... Smokin Mutant WINGS wrapped in Bacon Recipe

  1. Mix all the sauce ingredients together.
  2. Marinate chicken legs with the bbq sauce for 4 to 24 hours.
  3. Drain the marinade from the legs and wrap each leg with a strip of bacon and secure using wet toothpicks.
  4. (reserve the barbecue sauce)
  5. Set up your grill for Indirect Heat using a drip pan.
  6. Cook at 350F for 1 hour with a couple of handfuls of wet hickory chips directly on the hot coals.
  7. Place the reserve barbecue sauce/marinade in a saucepan and bring to a gentle boil.
  8. Reduce heat and simmer 5 to 10 minutes, just long enough to thicken.
  9. After 1 hour of cooking use the barbecue sauce to glaze chicken.
  10. Glazed about every 10 minutes for the next 30 minutes.
  11. Remove from the grill and then gently remove the toothpicks.
  12. Allow the chicken to rest for about 10 minutes before serving.
  13. Serve with ranch or blue cheese dressing.
