Blackeyed Pea Dip
- 1 (15 1/4 ounce) can black-eyed peas with jalapenos, or
- 1 (15 ounce) can black-eyed peas (plus 1 Tbsp Jalapeno Pepper, chopped)
- 14 cup onion, chopped
- 14 cup sour cream
- 2 tablespoons picante sauce
- 1 cup cheddar cheese, grated
- Preheat oven to 350*.
- Drain peas and discard juice.
- Mash peas with fork, but leave some chunks.
- Add all remaining ingredients and mix well.
- Spread in a baking dish and bake at 350* for 20-30 min or until the dip bubbles.
