Aunt Claire's Cornbread

  1. Preheat oven to 375 degrees.
  2. Mix flour, baking powder, salt, and corn meal together; set aside.
  3. In a second bowl, mix together the oil, sugar, eggs and milk.
  4. Pour the liquid mixture into the dry mixture and beat together.
  5. You may need to add a bit more milk - it should be the consistency of cake batter.
  6. Pour into a greased and floured 9 inch square pan.
  7. Bake for 35 to 40 minutes.
  8. If you would like to add chopped jalapenos or cheese, I would suggest decreasing the amount of sugar, as this does make a pretty sweet bread, and I don't think it would be suitable flavour with heat!
