Amish Funeral Pie
- 1 1/2 cup Raisins
- 2 cup Water
- 1 1/4 cup Sugar
- 4 tbsp Flour
- 1 Egg, well beaten
- 1 Juice of a Lemon
- 2 tsp Lemon Zest
- 1 pinch Salt
- 1 Pie Crust, enough for a double crust
- Preheat oven to 400
- If your raisins are soft then you are good to go.
- If they are hard, soak them in a bowl of water for three hours prior to beginning the pie making.
- Be sure to drain them well.
- Line a pie pan with bottom crust.
- Combine all ingredients in a large bowl placed over a pot of gently boiling water.
- (A double boiler)
- Cook mixture until it bubbles, about 15 minutes.
- Pour into pie crust.
- Cut top crust into strips and arrange in a criss crossed pattern.
- Bake at 400 for 10 minutes.
- Reduce heat to 350 and continue baking for an additional 30 minutes or until crust is golden.
