Salami and Cheese Picnic Pie
- 2 cups flour
- 14 teaspoon salt
- 1 tablespoon active dry yeast
- 12 cup warm milk (105 to 115 degrees F)
- 1 pinch sugar
- 2 tablespoons oil
- 1 egg, beaten
- 2 cups ricotta cheese
- 2 cups grated mozzarella cheese
- 12 cup romano cheese
- 12 cup parmesan cheese
- 1 cup salami, finely diced
- Combine flour and salt.
- Set aside.
- In another bowl, dissolve yeast in the warm milk, sprinkling with a pinch of sugar.
- Add the yeast mixture, along with the oil and egg to the flour.
- Mix together until dough is soft but not sticky.
- Set aside.
- To make the filling, combine the remaining ingredients.
- Cut the dough in half.
- Roll each half into an 11" circle.
- Place one round into a 9 or 10" cake pan.
- Fill with cheese mixture.
- Top with remaining dough.
- Crimp edges to seal.
- Bake at 350 degrees for 1 hour.
- Serve warm or at room temperature.
