CERTO Paradise Pear Jam

  1. REMOVE skins in quarters from orange and lemon.
  2. Lay quarters flat; shave off and discard half of white part.
  3. With a sharp knife cut rind very fine.
  4. Chop orange and lemon pulp.
  5. Peel, core and chop about 2 lbs pears.
  6. Combine fruits including maraschino cherries and pineapple.
  7. Measure 4-1/2 cups fruit into a large saucepan.
  8. ADD pectin to fruit.
  9. Mix well.
  10. PLACE over high heat and stir until mixtue comes to a full boil.
  11. Immediately stir in sugar.
  12. BRING to a full rolling boil and boil hard 1 minute, stirring constantly.
  13. Remove from heat.
  14. STIR and skim foam for 5 minutes to prevent floating fruit.
  15. Pour quickly into warm sterilized jars filling up to 1/4 inch from rim.
  16. SEAL while hot with sterilized 2-piece lids with new centres.
  17. If desired, process jars according to lid manufacturer's directions.
