Breakfast Rice with Grated Yam

  1. Peel the yam and soak it in vinegar water.
  2. Grind it in a mortar.
  3. Add the soy sauce and mirin to the dashi stock.
  4. While grinding the yam, gradually pour in the soy sauce and dashi mixture until smooth.
  5. You can optionally add egg yolk.
  6. Put some rice in a bowl and poured Step 3 over top.
  7. Garnish with aonori.
  8. Lightly Pickled Cucumbers with Shio-Koji.
