Breakfast Rice with Grated Yam
- 400 grams Nagaimo Yam
- 100 ml Dashi stock
- 1 tbsp Soy sauce
- 1 tsp Mirin
- 1 Egg yolk
- 1 Aonori
- Peel the yam and soak it in vinegar water.
- Grind it in a mortar.
- Add the soy sauce and mirin to the dashi stock.
- While grinding the yam, gradually pour in the soy sauce and dashi mixture until smooth.
- You can optionally add egg yolk.
- Put some rice in a bowl and poured Step 3 over top.
- Garnish with aonori.
- Lightly Pickled Cucumbers with Shio-Koji.
