Heart of the matter
- 1 lb beef heart
- 2 tbsp butter
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1 large onion, sliced and chopped
- 1/4 cup white wine
- 1/2 tsp paprika
- 1 tsp lemon juice
- 1/2 tsp meat tenderizer
- 8 oz sour cream
- 1/3 cup chopped parsley
- 1/4 tsp seasoned salt
- 1/4 tsp white pepper
- Cut heart into bite sized pieces.
- Now is the time to trim any tough pieces, silver skin and arteries off.
- Season the heart with pepper, paprika, lemon juice, meat tenderizer, wine, salt and pepper.
- Add heart in a bag.
- Refrigerate for 2 hours minimum.
- Mix parsley, white pepper, and seasoned salt.
- Set aside
- Melt butter.
- Add sliced onions and saute till tender.
- Add the heart.
- Saute till heart is browned.
- .
- Simmer 20 minutes stirring occasionally.
- The liquids will reduce.
- After 20 minutes add sour cream.
- Let heat stirring constantly.
- Then remove from heat and cover, let sit 7 minutes.
