Heart of the matter

  1. Cut heart into bite sized pieces.
  2. Now is the time to trim any tough pieces, silver skin and arteries off.
  3. Season the heart with pepper, paprika, lemon juice, meat tenderizer, wine, salt and pepper.
  4. Add heart in a bag.
  5. Refrigerate for 2 hours minimum.
  6. Mix parsley, white pepper, and seasoned salt.
  7. Set aside
  8. Melt butter.
  9. Add sliced onions and saute till tender.
  10. Add the heart.
  11. Saute till heart is browned.
  12. .
  13. Simmer 20 minutes stirring occasionally.
  14. The liquids will reduce.
  15. After 20 minutes add sour cream.
  16. Let heat stirring constantly.
  17. Then remove from heat and cover, let sit 7 minutes.
  18. Serve hope you enjoy!
