Devil's Food Cake Mix Cupcakes
- 3 large eggs
- 1/2 cup canola oil
- 1 cup (6 ounces) mini chocolate chips
- 1 (18.25 ounce) packaged devil's food cake mix
- 1 1/3 cup water
- Preheat oven to 350F.
- Line two 12 cup cupcake pans with paper or foil liners.
- Combine all ingredients in a large bowl.
- Using a mixer on low speed, beat for 4 minutes, stopping halfway through to scrape down the sides of the bowl.
- Divide the batter evenly among the paper liners.
- Bake for 25 to 30 minutes, or until the cupcakes spring back to the touch when pressed gently in the center.
- Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely before decorating.
