Chicken & Broccoli Casserole Recipe
- 2 (10 ounce.) pkg. frzn broccoli, cooked
- 4 Large eggs, cooked, sliced
- 3 breasts of chicken
- 2 (10 1/2 ounce.) cans Cheddar cheese soup
- 3/4 c. mayonnaise
- 4 tbsp. lemon juice
- 1 (4 ounce.) can button mushrooms
- 1/2 c. shredded Cheddar cheese
- 1/2 c. soft bread crumbs, buttered
- (to make 1 cube soft bread slice & soak up with butter)
- Cook and drain broccoli well, arrange in bottom of shallow 2 qt dish or possibly 9 x 13 x 2 inch pan.
- Layer Large eggs (sliced), then chicken cooked and cubed.
- Combine cheese soup, mayonnaise, lemon juice and mushrooms.
- Pour over chicken.
- Cover with shredded cheese then buttered crumbs.
- Bake at 350 degrees for 35 min or possibly till bubbly and lightly browned.
