Western Meat Loaf Recipe
- 2 to 2 1/2 pound grnd chuck
- 2 Large eggs
- 3 tbsp. Open Pit barbecue sauce
- 1/2 pkg. onion soup mix (shake env. before using)
- 1 teaspoon salt & pepper to taste
- 1 tbsp. oregano
- 1 to 1 1/2 c. crushed saltines
- Mix all ingredients well with fork.
- Knead with hands.
- Form into large ball and pack firmly.
- Shape into loaf, put in oven-proof skillet or possibly 9 x 12 pan.
- Cover and bake at 400 degrees for 1 hour.
- Sprinkle a little extra oregano on top of loaf and squeeze a swirl of ketchup on top.
- Bake uncovered 5 - 10 min till brown on top.
- Serves 6.
