Gluten-Free Fruit Fiber Bread

  1. Pour 1/2 cup of water over 1/2 cup dry whole oats and let sit for about 15 minutes.
  2. Stir Truvia into fruit fiber--optional if the fruits you are using are already sweet--and let sit.
  3. Preheat oven to 350 degrees.
  4. Grease a loaf pan and sprinkle it with sugar.
  5. Stir together baking mix, xanthum gum, soda, baking powder, and salt, and brown sugar.
  6. Mix in eggs, butter, soaked oats, fruit fiber, and buttermilk.
  7. Beat on low speed until fully combined.
  8. Pour batter into prepared loaf pan, filling about 2/3 full.
  9. Bake about 40-45 minutes, or until center is firm and cake tester comes out clean.
