Yet Another Chili
- 1 pound ground beef
- 1 pound ground pork
- 1 pound beef, steak
- 1 x sweet red bell peppers
- 3 medium onions
- 1 bunch scallions, spring or green onions
- 3 each celery stalks
- 2 cans red kidney beans
- 1 x jalapeno pepper
- 1 teaspoon red hot pepper sauce
- 2 ounces chili powder
- 1/4 teaspoon cayenne pepper
- 1 teaspoon cumin
- 1 x garlic to taste
- 1 dash paprika
- 1 x sage and oregano
- 1 can beer
- 1 shot tequila
- 16 ounces tomatoes, canned blended
- 1 can tomato paste
- Saute onions in butter.
- Add chopped pepper, celery and green onions.
- Add peppers, spices, tomatoes and tomato paste.
- Add beer and tequila.
- Brown meat in olive oil and add to the mixture.
- Cut the steak into small pieces and brown.
- DON'T USE THE FAT.
- Stir it up and let it cook.
- Don't use a lid.
- It usually takes 2 hours or more.
- Wait until it's almost done to put the final adjustment on the spices.
- Add the beans about 1 hour before it is done.
