Beer-Braised Pork
- 2 lbs boneless pork ribs, cut into 1/2 inch piees
- 1 teaspoon sea salt
- 3 garlic cloves, minced
- 12 ounces amber beer, like abita
- 12 cup chicken broth
- 1 12 tablespoons canned chipotle chiles in adobo (leave chile whole for flavor, chop to intensify heat)
- Cut Pork into 1/2 inch pieces.
- Place all ingredients in Crockpot.
- Cook on Low for 4-5 hours, until you can pull apart with a fork.
- To serve, saute to carmelize/crisp up the edges of port.
- Serve on soft taco with my Roasted Corn & Black Bean Salad, guacamole, or your favorite salsa and cheese OR shred and toss with your favorite BBQ sauce for delicious pulled pork sandwiches.
