Low Calorie Nachos
- 2 whole Mission Tortilla Ultra Thin Corn Tortillas (40 Calories Each)
- 2 Tablespoons Black Beans
- 2 Tablespoons Tomatoes, Seeded, Diced
- 2 Tablespoons Onion, Diced
- 1 Tablespoon Queso Cheese (I Used Trader Joe's), Warmed
- 1 Tablespoon Pickled Jalapenos
- 2 Tablespoons Avocado, diced
- 1 Tablespoon Greek Yogurt, Plain
- Salt To Taste
- Preheat your broiler on high.
- Line a baking sheet with parchment paper.
- Cut your tortilla shells into 6 slices per shell.
- Place shells on baking sheet and lightly spray with cooking spray.
- Flip shells and lightly spray the other side with cooking spray and sprinkle with salt.
- Place under the broiler on the bottom shelf and cook for 2 minutes.
- Flip the chips, and cook for 2 more minutes or until crispy.
- Watch so they dont burn.
- When done remove the pan from the oven.
- Place cooked tortilla shells onto your plate and layer with black beans, tomato and onions.
- I make sure to put ingredients underneath the chips too.
- Then add cheese, jalapenos.
- avocado and add a dollop of Greek yogurt.
