Beware of Fresh Leaves With Holes!

• 1 Basil, arugula, shiso, lettuce, etc.
• 1 handful Salt

1. Coat the leaves in a handful of salt and leave for several minutes.
2. If using lettuce, soak it in strong salt water.
3. Rinse well before using.
