Blender Chocolate Mousse Recipe
- 1 env. unflavored gelatin
- 1 tbsp. instant coffee crystals
- 3/4 c. lowfat milk, scalded
- 1 (6 ounce.) pkg. semi-sweet chocolate pcs
- 2 tbsp. sugar
- 1/2 teaspoon vanilla
- 1 c. cool lowfat milk
- 1 c. whipping cream
- In blender container combine 1/4 c. cool water, gelatin and coffee crystals.
- Cover and blend 20 seconds on low speed.
- Add in the scalded lowfat milk.
- Cover; blend till gelatin dissolves.
- Add in chocolate, sugar and vanilla.
- Cover; blend till smooth.
- With blender running, add in the cool lowfat milk.
- Pour into bowl; refrigeratetill partially set.
- Beat just to soft peaks; fold into chocolate mix.
- Pour into individual dessert dishes.
- Refrigerateseveral hrs or possibly till hard.
- Makes 6 servings.
