Beef Curry over Rice Noodles

  1. Cut beef in thin slices (I used Black Angus).
  2. In a nonstick skillet, add oil and saute beef over medium-high heat for 34 minutes.
  3. Add red onions, garlic, saute for about 4 minutes.
  4. Add fresh ginger, sambal oelek, curry powder; cook, stirring, until fragrant, about 45 seconds.
  5. Add soy sauce, lime juice and peanuts.
  6. Saute another 30 seconds.
  7. Server over rice noodles.
