Beef Curry over Rice Noodles
- 1 pound Inside Round Steak
- 1 Tablespoon Oil, Or As Needed To Cook Beef
- 1/4 cups Red Onion
- 2 cloves Garlic
- 1 teaspoon Fresh Ginger
- 1 teaspoon Sambal Oelek
- 2 teaspoons Curry Powder
- 2 Tablespoons Soy Sauce
- 2 teaspoons Lime Juice
- 1/4 cups Roasted Peanuts
- Rice Noodles, To Serve
- Cut beef in thin slices (I used Black Angus).
- In a nonstick skillet, add oil and saute beef over medium-high heat for 34 minutes.
- Add red onions, garlic, saute for about 4 minutes.
- Add fresh ginger, sambal oelek, curry powder; cook, stirring, until fragrant, about 45 seconds.
- Add soy sauce, lime juice and peanuts.
- Saute another 30 seconds.
- Server over rice noodles.
