Italian Sausage Kebabs

  1. Preheat grill or grill-pan to medium high.
  2. If using bamboo skewers, soak them in water for 10 minutes.
  3. Remove and discard seeds from both bell peppers, then quarter lengthwise.
  4. Cut each quarter in half crosswise, creating 8 chunks from each pepper.
  5. Thread Italian sausage, peppers, onion, and garlic cloves onto 8 skewers.
  6. Brush kebabs with Extra-virgin olive oil.
  7. Season with salt and pepper.
  8. Grill kebabs, turning occasionally, until slightly charred, 12-25 minutes.
