Italian Sausage Kebabs
- 1 green bell pepper
- 1 yellow bell pepper
- 1 sweet onion, quartered lengthewise, and halved crosswise
- 8 Italian sausages, quartered crosswise (hot or sweet)
- 1 large head of garlic, separated into cloves and peeled
- 3 tablespoons extra virgin olive oil
- salt & freshly ground black pepper
- Preheat grill or grill-pan to medium high.
- If using bamboo skewers, soak them in water for 10 minutes.
- Remove and discard seeds from both bell peppers, then quarter lengthwise.
- Cut each quarter in half crosswise, creating 8 chunks from each pepper.
- Thread Italian sausage, peppers, onion, and garlic cloves onto 8 skewers.
- Brush kebabs with Extra-virgin olive oil.
- Season with salt and pepper.
- Grill kebabs, turning occasionally, until slightly charred, 12-25 minutes.
