Sausage With Cheese Tortellini Soup
- 2 slices bacon, diced
- 2 cups onions, chopped
- 34 lb Italian sausage
- 8 cups beef broth
- 2 tablespoons fresh basil, minced
- 12 cup fresh parsley, minced
- 1 garlic clove, pressed
- 14 teaspoon cayenne pepper
- 14 teaspoon black pepper
- 1 (9 ounce) package cheese tortellini
- 2 cups fresh spinach leaves, torn
- cooking day.
- In stock pot, saute bacon and onion until golden.
- Add sausage, beef broth, basil,parsley, garlic, cayenne pepper, and black pepper.
- Bring to boil.Reduce heat and simmer for 10 minutes.
- In a separate stockpot, cook tortellini according to package directions.
- Drain.
- Add tortellini and spinach leaves to soup, then simmer until tortellini heated through, bot do not boil.
- Remove from heat and cool.
- Freeze, using freezer bag method.
- Serving Day.
- thaw completely.
- Reheat on stove, but do not boil.
- Garnish soup with fresh Parmesan cheese and croutons: serve.
