Spicy Sauteed Spinach

  1. In a large skillet, cook the garlic in the olive oil over moderate heat until the garlic is light golden, about 6 minutes.
  2. Add the crushed red pepper and cook for 30 seconds.
  3. Add the spinach and cook over moderately high heat, tossing occasionally, until wilted, about 3 minutes.
  4. Season with salt and pepper and serve.
