Spicy Sauteed Spinach
- 3 garlic cloves, smashed
- 2 tablespoons extra-virgin olive oil
- Crushed red pepper
- Two 10-ounce bags spinach
- Kosher salt and freshly ground pepper
- In a large skillet, cook the garlic in the olive oil over moderate heat until the garlic is light golden, about 6 minutes.
- Add the crushed red pepper and cook for 30 seconds.
- Add the spinach and cook over moderately high heat, tossing occasionally, until wilted, about 3 minutes.
- Season with salt and pepper and serve.
