Sweet Potato Puree

  1. Peel potatoes and cut into 1-inch pieces.
  2. In a small saucepan boil potatoes in salted water for 15 minutes, or until very tender, and drain well in a colander.
  3. In a food processor puree hot potatoes with milk and butter until smooth and season with salt and pepper.
  4. Sprinkle with candied ginger.
