Texas Surprise
- 50 garlic cloves
- boiling water
- 1 jalapeno, chopped
- 6 garlic cloves, crushed
- 6 ounces hot sausage, at room temperature
- 6 ounces mild sausage, at room temperature
- 2 14 cups buttermilk baking mix
- 12 ounces sharp cheddar cheese, shredded, at room temperature
- Preheat oven to 325F.
- Place garlic cloves in boiling water.
- Blanch 3-4 minutes.
- Drain.
- Peel and set aside.
- Combine jalapeno, crushed garlic (NOT the cloves you just peeled), sausages and baking mix in food processor.
- Process until well combined.
- Add cheese and process until just combined.
- Shape mixture into balls.
- Press a peeled garlic clove into the center of each ball.
- Place on ungreased baking sheet.
- Bake 20-25 minutes, or until golden brown.
- These may be frozen after shaping.
- Bake them without thawing, but increase time an additional 5-10 minutes.
