Souperior Meatloaf
- 1 lb ground beef (90/10)
- 1 lb ground pork
- 1 box stove top stuffing
- 1 can golden mushroom soup
- 1 can beefy mushroom soup
- 2 tbsp horseradish
- 2 large eggs
- In medium bowl combine ground beef and ground pork.
- Set aside.
- Whisk eggs in a small bowl add horseradish and mix well.
- Open stuffing, add entire package to meat mixture.
- Mix well with hands (it's the best way to insure it is mixed) add in egg mixture, and 1/2 can golden mushroom soup, continue using your hands until mixed well.
- Form into a loaf and place in casserole dish or cast iron skillet.
- Pour remaining golden mushroom soup on top.
- Bake at 350 for 55 minutes.
- Remove from oven and cover the top with the entire can of beefy mushroom soup and bake for another 10 minutes.
- Remove from oven and let cool for 10 minutes, slice and serve.
