Dinner In A Pumpkin
- 2 pounds Ground Beef
- 3/4 cups Diced Celery
- 3/4 cups Diced Onion
- 1/2 cups Diced Green Pepper
- 1/4 cups Soy Sauce
- 2 Tablespoons Packed Brown Sugar
- 1 can Sliced Mushrooms (4 Ounce Can)
- 1 can (10 Oz. Size) Cream Of Mushroom Or Cream Of Chicken Soup ("Healthy" Version Is Fine)
- 2 cups Cooked Rice
- 1 whole Medium - Large Pie Pumpkin
- Optional Substitutions For Onion And Green Pepper: 3/4 Cups Diced Carrot And 1/2 Cup Corn
- Preheat oven to 375 degrees (F).
- Prepare ground beef mix in a frying pan by sauteing ground beef, celery, onion and green pepper until beef is browned and vegetables are soft.
- You can substitute other vegetables such as chopped carrots or corn, depending on your familys tastes...or add them all for a total of about 2 cups diced vegetables.
- In a large bowl combine 4 cups of the ground beef mix with the remaining ingredients (except the pumpkin).
- Cut open the pumpkin and remove the seeds.
- Stuff pumpkin with meat mixture*.
- Place on foil-lined cookie sheet and and bake for one hour.
- To serve scoop out meat mixture along with the cooked pumpkin.
- * If I have leftover meat mixture I bake it in a small casserole dish along with the pumpkin.
