Dinner In A Pumpkin

  1. Preheat oven to 375 degrees (F).
  2. Prepare ground beef mix in a frying pan by sauteing ground beef, celery, onion and green pepper until beef is browned and vegetables are soft.
  3. You can substitute other vegetables such as chopped carrots or corn, depending on your familys tastes...or add them all for a total of about 2 cups diced vegetables.
  4. In a large bowl combine 4 cups of the ground beef mix with the remaining ingredients (except the pumpkin).
  5. Cut open the pumpkin and remove the seeds.
  6. Stuff pumpkin with meat mixture*.
  7. Place on foil-lined cookie sheet and and bake for one hour.
  8. To serve scoop out meat mixture along with the cooked pumpkin.
  9. * If I have leftover meat mixture I bake it in a small casserole dish along with the pumpkin.
