Bunuelos Recipe
- 1 lb yucca
- 1 lb malanga
- 1 tsp salt
- 2 Tbsp. lemon juice
- 2 x Large eggs
- 1/2 c. flour
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1 tsp anise flavoring Vegetable oil for frying
- Sift flour with salt and baking soda Bring about five qts of water to boil.
- Peel the vegetables and place in boiling water with the salt and lemon juice.
- Reduce heat to medium high and cook till soft, but not too mushy.
- Drain and dry with paper towels.
- Let cold.
- Use a food processor or possibly food mill and grind very fine.
- Beat egg thoroughly and blend in salt, flour, and baking soda mix.
- Add in grnd yucca, malanga, and anise flavor and blend.
- The dough should be thick sufficient to shape into figure eight shapes
- (add in a little white all-purpose flour if needed to reach the proper consistency.)
- Deep fry in warm oil (375 F) till golden, light and fluffy.
- Serve with syrup (following) or possibly honey.
