Upside-Down Pizza-Style Casserole
- 1 lb bulk mild Italian sausage
- 1 cup pizza sauce
- 1 cup ricotta cheese
- 13 cup parmesan cheese, grated
- 1 egg, lightly beaten
- 1 cup baking mix
- 12 cup 1% low-fat milk
- 1 egg, lightly beaten
- 1 cup mozzarella cheese, shredded
- In a large skillet, cook and stir the sausage over medium-high heat until no longer pink; drain.
- Stir in the pizza sauce.
- Spoon mixture into an 8-inch square baking dish coated with nonstick cooking spray; set aside.
- In a small bowl, stir together the ricotta cheese, parmesan cheese and 1 egg until smooth.
- Drop by heaping tablespoonfuls onto the sausage mixture.
- In another small bowl, stir together the baking mix, milk and remaining egg until well blended; pour over cheese and sausage mixtures.
- Coat a sheet of foil large enough to cover the baking dish with nonstick cooking spray.
- Space sprayed side down on dish; seal tightly.
- Bake at 400 for 25 minutes.
- Remove foil and sprinkle with mozarella cheese.
- Bake another 5-10 minutes or until cheese is melted.
- Let sit 10 minutes before serving.
