Upside-Down Pizza-Style Casserole

  1. In a large skillet, cook and stir the sausage over medium-high heat until no longer pink; drain.
  2. Stir in the pizza sauce.
  3. Spoon mixture into an 8-inch square baking dish coated with nonstick cooking spray; set aside.
  4. In a small bowl, stir together the ricotta cheese, parmesan cheese and 1 egg until smooth.
  5. Drop by heaping tablespoonfuls onto the sausage mixture.
  6. In another small bowl, stir together the baking mix, milk and remaining egg until well blended; pour over cheese and sausage mixtures.
  7. Coat a sheet of foil large enough to cover the baking dish with nonstick cooking spray.
  8. Space sprayed side down on dish; seal tightly.
  9. Bake at 400 for 25 minutes.
  10. Remove foil and sprinkle with mozarella cheese.
  11. Bake another 5-10 minutes or until cheese is melted.
  12. Let sit 10 minutes before serving.
