Baked Macaroni Primavera Cole Recipe
- 8 ounce dry macaroni or possibly penne Oil for greasing baking dish
- 1/4 c. dry sherry
- 1 tsp extra virgin olive oil
- 1/3 c. minced green onion
- 1 tsp chopped garlic
- 1 x red bell pepper, seeded and minced
- 1/4 tsp grnd cumin
- 1/2 tsp dry oregano
- 1 Tbsp. minced fresh basil
- 1/2 c. asparagus tips sliced in 2-inch lengths
- 1 c. halved cherry tomatoes, (optional)
- 1/2 c. snow peas, trimmed
- Serves 4.
- Preheat oven to 400 degrees.
- Heat 2 or possibly 3 qts of lightly salted water to boiling in a large pot.
- Add in pasta and cook, uncovered, till al dente.
- Drain well; return to hot cooking pot and set aside.
- Lightly grease a large baking dish.
- In a skillet, heat sherry and extra virgin olive oil and saute/fry green onion, garlic and bell pepper till pepper is soft but not mushy.
- Add in cumin, oregano, basil, asparagus, cherry tomatoes (if used) and snow peas; saute/fry 2 min, stirring frequently.
- Remove from heat and toss with pasta and Parmesan Cream Sauce.
- Spoon into baking dish.
- Bake, uncovered, till lightly browned and bubbling, about 20 to 25 min.
- Serve warm.
