Ham and Feta Cheese Souffle

  1. Grease 1-1/2-quart souffle or casserole dish; sprinkle with 2 Tbsp.
  2. of the cereal.
  3. Set aside.
  4. Bring milk to boil in medium saucepan on medium heat.
  5. Gradually stir in remaining 1/2 cup cereal; cook 2 to 3 minutes or until thickened, stirring constantly.
  6. Remove from heat; cool 5 minutes.
  7. Add cheese, onion, parsley, ham and 1 of the egg yolks; mix well.
  8. (Reserve remaining 2 egg yolks for another use.)
  9. Set aside.
  10. Beat egg whites with electric mixer on high speed until stiff peaks form.
  11. Add to cereal mixture; stir gently with wire whisk until well blended.
  12. Pour into prepared dish.
  13. Bake at 400F for 35 to 40 minutes or until center is set and top is golden brown.
  14. Serve immediately.
