Chicken and Dumplings
- 1 lg. chicken fryer
- 1 gal. water
- 2 chicken bouillon cubes
- Salt and pepper
- 1 tsp. shortening
- 1/2 cup flour
- 1 cup buttermilk
- 1 tsp. soda
- 1 dash salt
- Chicken: Cook until chicken falls from the bone in water.
- Put bouillon cubes, salt and pepper.
- Remove chicken from bone.
- Let simmer while making the dumplings.
- Dumplings: Cut shortening into dry ingredients.
- Add buttermilk.
- Stir and add enough flour to make a heavy dough.
- Place on floured board.
- Roll to 1/4-inch thickness.
- Cut into short strips.
- Be sure dumplings are well floured, then place in chicken.
- Cover, cook 15 minutes or until tender.
- To thicken chicken and dumplings, cup water and flour; stir.
