Bunny Patch Cupcakes
- 1 pkg. (2-layer size) white cake mix
- 1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
- 1-1/2 cups BAKER'S ANGEL FLAKE Coconut
- 1 to 2 drops green food coloring
- 2 cups thawed COOL WHIP Whipped Topping
- 24 JET-PUFFED BUNNY MALLOWS Marshmallows
- 1/2 cup assorted jelly beans
- Heat oven to 350F.
- Prepare cake batter as directed on package for 24 cupcakes, adding dry gelatin mix to batter before spooning into paper-lined muffin cups.
- Bake 20 to 25 min.
- or until toothpick inserted in centers comes out clean.
- Cool cupcakes in pans 10 min.
- Remove to wire racks; cool completely.
- Meanwhile, place coconut and food coloring in small resealable plastic bag; close bag and shake until coconut is evenly tinted.
- Frost tops of cupcakes with COOL WHIP; top with tinted coconut.
- Arrange cupcakes, with sides touching, on serving tray.
- Decorate with marshmallows and jelly beans to resemble a bunny patch.
