Turkey Cutlets with Mixed Berry Sauce

  1. In 12-inch nonstick skillet, heat 1 teaspoon oil on medium 1 minute.
  2. Sprinkle turkey with 1/4 teaspoon each salt and freshly ground black pepper to season both sides.
  3. Add turkey to skillet, in 2 batches, and cook 8 to 9 minutes per batch or until no longer pink inside, turning turkey over once halfway through cooking.
  4. Transfer turkey to plate once it is cooked.
  5. Cover with foil to keep warm.
  6. When all turkey is cooked, to same skillet add green onions and remaining 2 teaspoons oil and cook 2 to 3 minutes or until green onions are softened and beginning to brown, stirring occasionally.
  7. Stir in frozen berries and water; heat to boiling.
  8. Cook berries 5 minutes or until sauce thickens.
  9. Remove skillet from heat and stir in Dijon.
  10. Serve berry sauce over turkey cutlets.
