Turkey Cutlets with Mixed Berry Sauce
- 3 tsp. olive oil
- 1 1/2 lb. turkey-breast cutlets
- salt and pepper
- 3 green onions
- 1 bag frozen mixed berries
- 1/4 c. water
- 2 tsp. Dijon mustard
- In 12-inch nonstick skillet, heat 1 teaspoon oil on medium 1 minute.
- Sprinkle turkey with 1/4 teaspoon each salt and freshly ground black pepper to season both sides.
- Add turkey to skillet, in 2 batches, and cook 8 to 9 minutes per batch or until no longer pink inside, turning turkey over once halfway through cooking.
- Transfer turkey to plate once it is cooked.
- Cover with foil to keep warm.
- When all turkey is cooked, to same skillet add green onions and remaining 2 teaspoons oil and cook 2 to 3 minutes or until green onions are softened and beginning to brown, stirring occasionally.
- Stir in frozen berries and water; heat to boiling.
- Cook berries 5 minutes or until sauce thickens.
- Remove skillet from heat and stir in Dijon.
- Serve berry sauce over turkey cutlets.
