Kumquat, Seville Orange, and Apricot Marmalade
- 1 cup Ma Made prepared Seville oranges,* thin- or thick-cut
- 1 cup thinly sliced kumquats (about 5 ounces)
- 1 cup thinly sliced dried apricots (about 1/4 pound)
- 2 1/4 cups sugar
- 1/2 cup water
- *available at some specialty foods shops
- In a saucepan bring all ingredients to a boil, stirring, and simmer, stirring occasionally, 15 minutes, or until slightly thickened.
- Let marmalade cool in a heat-proof bowl and chill, covered, until cold, about 2 hours.
- Marmalade keeps, covered and chilled, 2 weeks.
