Candied Chestnuts Recipe

  1. In a large saucepan, cover chestnuts with water.
  2. Bring to the boil,simmer 8 min.
  3. Drain and throw away liquid.
  4. Using a kitchen towel, rub off brown inner skins.
  5. In a large saucepan, cook sugar, water and vanilla over low heat till sugar dissolves.
  6. Increase heat and simmer 10 min.
  7. Pour syrup and nuts into a large bowl.
  8. Let stand for 12 hrs.
  9. Return to pan and boil 1 minute.
  10. Return to bowl.
  11. Let stand 24 hrs.
  12. Repeat process 3 times till syrup has been absorbed.
  13. Preheat oven to 65C.
  14. Cover a wire rack with greaseproof paper.
  15. Place chestnuts on wire rack.
  16. Place in oven with oven door open 2 hrs or possibly till hard.
  17. Remove from oven and cold.
  18. Store in container lined with greaseproof paper.
