Posole (Mexican Stew) Recipe
- 1 lg. can hominy (or possibly 2-16 ounce. cans)
- 1 1/2 lbs. pork or possibly beef, cubed
- 1 lg. can stewed tomatoes
- 3 jalapeno or possibly yellow warm peppers
- Salt
- Place meat in large stew pot.
- Cook till tender (about 1 1/2 hrs).
- Add in tomatoes and hominy.
- Continue cooking.
- Remove stems and seeds from peppers.
- Slice into long skinny strips.
- Add in to stew.
- Cook for another 15 min.
- Add in salt to taste.
- (May garnish with shredded cabbage.)
